Hanukkah Treat: Stuffed Fish!
This Hanukkah, why not try a new and delicious recipe for stuffed fish? This dish is easy to make and can be adapted to include your favorite ingredients.
Ingredients:
1 fish of your choice (try tilapia, cod, or catfish)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried basil leaves
1/4 teaspoon garlic powder
1 tablespoon olive oil or butter Free range eggs (optional)
Instructions: Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet with butter or cooking spray. Rinse the fish and pat dry. In a small bowl, combine the breadcrumbs, Parmesan cheese, basil, garlic powder and olive oil. Stuff the mixture into the cavity of the fish. If desired, break eggs over the fish. Bake in the preheated oven for 20 minutes or until the fish flakes easily with a fork.

Ingredients:
-1 pound cod or other white fish, cut into 1-inch pieces
-1/2 cup seasoned bread crumbs
-1/4 cup grated Parmesan cheese
-1 teaspoon dried parsley
-1/2 teaspoon garlic powder
-Salt and pepper, to taste
For the stuffing:
-1/4 cup olive oil -1/2 onion, chopped -1 green bell pepper, chopped -1 (14.5 ounce) can diced tomatoes, undrained -1 tablespoon minced fresh parsley leaves or 1 teaspoon dried parsley flakes -1 tablespoon minced fresh basil leaves or 1 teaspoon dried basil leaves -Salt and pepper, to taste
Instructions:
preheat oven to 400 degrees F. In a large bowl, combine bread crumbs, Parmesan cheese, parsley, garlic powder and salt and pepper, to taste. Dip each piece of fish in the bread crumb mixture until coated and then place in a greased 9×13 inch baking dish. set aside.In a large skillet over medium heat, heat olive oil. Add onion and bell pepper and cook until tender, about 5 minutes. Add diced tomatoes with its juice, parsley, basil and salt and pepper, to taste. Pour tomato mixture over cod fillets. Mediterranean Stuffed Fish
This Mediterranean Stuffed Fish dish is perfect for a weeknight meal, and it's packed full of flavor!
Ingredients:
1 lb. cod or other firm white fish, cleaned and trimmed
1/2 cup diced red onion
1/4 cup diced red bell pepper
1/4 cup diced yellow bell pepper
1/4 cup diced green bell pepper
2 cloves garlic, minced
1 tsp. dried oregano leaves
1 tsp. dried basil leaves
1/4 tsp. black pepper, freshly ground
Instructions:
Preheat oven to 400 degrees F (200 degrees C). Cut fish lengthwise into two thin fillets. Mix together the onion, red bell peppers, yellow bell peppers, green bell peppers, garlic, oregano leaves, basil leaves and black pepper; spread evenly over each fish fillet. Roll up the fish Fillets so the filling is enclosed inside. Secure with toothpicks if needed. Place on a lightly greased baking dish. Bake in preheated oven for 20 to 25 minutes, or until fish flakes easily with a fork.

Crab and Shrimp Stuffed Fish
Ingredients:
- 1 Tilapia Fillet
- 1/2 cup lump crabmeat
- 1/4 cup boiled and peeled shrimp
- 2 tablespoons olive oil
- 1 tablespoon diced red onion
- 1 tablespoon diced green bell pepper
- 1 tablespoon diced yellow bell pepper
- 1 teaspoon Old Bay seasoning
- Salt and black pepper to taste
For the stuffing mixture: mix together the crabmeat, shrimp, olive oil, red onion, green bell pepper, yellow bell pepper, Old Bay seasoning, salt and black pepper. Set aside.
Preheat oven to 350 degrees F.
Butterfly the tilapia by slicing horizontally but not completely through the fish. Be careful not to cut all the way through or the stuffing will fall out. Open up the fish like a book and season with salt and black pepper. Spoon the stuffing mixture into the center of the fish. Close up the fish by bringing together both halves of the fillet. Secure with toothpicks if needed.
Place on a baking sheet coated with cooking spray and bake for 20 minutes or until fish is cooked through. Serve immediately.
Lobster Stuffed Fish
Ingredients:
1 (1-pound) fish fillet, such as cod, sea bass or catfish
Kosher salt and black pepper
2 tablespoons olive oil, divided 1/4 cup diced onion 1/4 cup diced celery 1/4 cup diced red bell pepper 1/4 cup diced green bell pepper 1 garlic clove, minced 1 tablespoon all-purpose flour 1 cup milk 1 (6-ounce) can tomato paste 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh thyme *2 tablespoons chopped fresh basil 8 ounces frozen lobster tails, thawed and cut into bite-sized pieces (may substitute cooked shrimp)
Instructions:
1. Preheat oven to 375 degrees F. 2. Season fish with salt and black pepper. Heat olive oil in a large ovenproof skillet over medium-high heat. Add fish to the skillet; cook for 3 minutes per side or until browned. Remove from heat.
- Add onion, celery, bell peppers, garlic, and flour to the skillet; cook for 5 minutes or until vegetables are tender. Stir in milk and tomato paste; bring to a boil. Return fish to the skillet. Spoon vegetables over fish. Bake at 375 degrees for 8 minutes or until fish is cooked through. Sprinkle with parsley, thyme, and basil before serving
