If you have difficulty removing them, carefully use a spoon to scoop them out. Rinse the fish inside and out with cold water, then pat dry with paper towels. 2. Cut the lemon in half and squeeze the juice over the fish. Peel and chop the onion and garlic cloves, and add them to the cavity of the fish. Add a few sprigs of fresh parsley or thyme, then season generously with salt and pepper. Drizzle 2 tablespoons of olive oil over the top of the fish. 3. Bake in a preheated oven for 30-40 minutes, until cooked through. You can test this by inserting a fork into the thickest part of the flesh - it should be opaque all the way through. 4. Serve immediately with some roasted vegetables or boiled new potatoes on the side. Enjoy!
