The star of this dish is, of course, the fish. I recommend using a firm white fish such as tilapia or cod. You'll need two fillets per person. Preheat your oven to 400 degrees Fahrenheit.

While the oven is heating up, you can start preparing the stuffing. In a medium-sized bowl, mix together one cup of cooked brown rice, one diced green bell pepper, one diced red onion, one cup of canned black beans (rinsed and drained), one teaspoon of chili powder, and half a teaspoon each of salt and cumin powder.

Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with olive oil or butter.

Cut the fish into 4 equal portions. In a bowl, combine the onion, celery, bell pepper, parsley, garlic, thyme, oregano, salt, and pepper. Mix well and divide the mixture evenly among the fish portions. Spread the bread crumbs over each portion. Drizzle with olive oil or melted butter. Bake for about 20 minutes in the preheated oven, or until the fish are cooked through. Serve with lemon wedges.

1 whole fish (preferably fresh)

1 lemon

1 onion

3 cloves garlic

a few sprigs of fresh parsley or thyme

3 tablespoons olive oil, divided

salt and pepper to taste

 1. Preheat the oven to 350 degrees Fahrenheit. Insert a sharp knife into the cavity of the fish and cut towards the navel. Open up the fish and remove the entrails. If you have difficulty removing them, carefully use a spoon to scoop them out. Rinse the fish inside and out with cold water, then pat dry with paper towels. 2. Cut the lemon in half and squeeze the juice over the fish. Peel and chop the onion and garlic cloves, and add them to the cavity of the fish. Add a few sprigs of fresh parsley or thyme, then season generously with salt and pepper. Drizzle 2 tablespoons of olive oil over the top of the fish. 3. Bake in a preheated oven for 30-40 minutes, until cooked through. You can test this by inserting a fork into the thickest part of the flesh - it should be opaque all the way through. 4. Serve immediately with some roasted vegetables or boiled new potatoes on the side. Enjoy!
