Stuffed Flounder with Crabmeat
This dish is a luxurious and elegant way to prepare flounder. The crabmeat stuffing is flavorful and delicate, and the flounder itself is cooked just until it's tender.
Ingredients: 1 (1-pound) flank of flounder 1/3 cup mayonnaise 1/4 cup sour cream 1 teaspoon Old Bay seasoning 1/2 teaspoon garlic powder 1/4 teaspoon ground black pepper 1/2 cup fresh bread crumbs 1/4 cup chopped fresh parsley 1/4 cup chopped green onions 1 (6-ounce) can Crabmeat, drained Lemon wedges (optional) Instructions: Preheat oven to 350 degrees F (175 degrees C). Cut 1 inch diagonal slits in the skin of the fish. Combine mayonnaise, sour cream, Old Bay seasoning, garlic powder, and black pepper; spread over fish. Mix together bread crumbs, parsley, green onions, and crabmeat; stuff into slits in fish. Bake for 25 minutes in the preheated oven, or until fish flakes easily with a fork. Serve with lemon wedges if desired.
Fried Cod stuffed with shrimp and crabmeat
Ingredients -1/2 pound cod fillets, about 1-inch thick -1/4 cup all-purpose flour -1/4 teaspoon salt -1/4 teaspoon black pepper -2 tablespoons olive oil or vegetable oil -1/2 cup fine dry bread crumbs -1/4 cup shredded Cheddar cheese -3 tablespoons minced fresh parsley -1 tablespoon minced fresh thyme -1 tablespoon minced fresh basil -2 teaspoons Dijon mustard -1 large egg, beaten to blend -8 ounces lump crabmeat, picked over for shells -8 medium shrimp, peeled and deveined (if using frozen shrimp, thaw before using)
Instructions 1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish with about 1 teaspoon of the oil. 2. Sprinkle both sides of the fish with flour, salt, and pepper. Heat the remaining oil in a large skillet over mediumhigh heat until hot. Add the fish and cook for 3 minutes on each side or until browned. Remove from heat. 3. In a medium bowl, combine the bread crumbs, cheese, parsley, thyme, basil, mustard, and egg. Mix well. Gently fold in the crabmeat and shrimp. 4. Spoon mixture evenly over each piece of fish. Bake for 10 minutes or until the filling is just set and the fish is cooked through.
Bacon Wrapped Stuffed Trout
This dish is an impressive and easy way to show off your culinary skills. It is a great appetizer or main dish.
Ingredients:
-1 trout, gutted and cleaned -8 strips of bacon -1/2 cup of stuffing mix (your choice) -1 tbsp. of butter -salt and pepper to taste
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Cut 4 strips of bacon in half, lengthwise. Force the stuffing mix into the cavity of the trout. Wrap the bacon around the trout, securing it with a toothpick. Place the trout in a baking dish.
- Melt butter, and pour over top of the trout. Sprinkle with salt and pepper. Bake for 30 minutes in the preheated oven, or until the bacon is crisp.
Lemon Basil Stuffed Sole
This dish is easy to make and has a great flavor.
Ingredients: 1/2 pound sole or other thin white fish fillets 1 tablespoon olive oil 1/4 cup chopped onion 1/4 cup chopped lemon basil 1/4 teaspoon black pepper 1/4 cup dry white wine 1 tablespoon unsalted butter 1 tablespoon all-purpose flour 1 cup milk 3 tablespoons grated Parmesan cheese Lemon wedges (optional) Instructions: Preheat oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray. Cut fish into 4 serving pieces. In a large skillet over medium heat, heat olive oil. Add onion and lemon basil; cook until tender. Add fish, pepper, white wine, and butter. Cook for 3 minutes or until fish begins to flake easily when tested with a fork. Remove from heat. Sprinkle flour over the top of the fish mixture; stir gently to combine. Gradually add milk, stirring constantly until mixture thickens and boils. Boil for 1 minute. Remove from heat; stir in Parmesan cheese. Place fish on the prepared baking sheet. Bake for 10 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges, if desired.
Crabmeat stuffed salmon
Ingredients:
-1 salmon filet -1/2 cup crabmeat -1/4 cup bread crumbs -1/4 cup parsley, chopped -2 tablespoons Parmesan cheese, grated -1 tablespoon lemon juice -1 garlic clove, minced -Salt and pepper to taste
Instructions:
- Preheat oven to 400 degrees.
- In a bowl, mix together crabmeat, bread crumbs, parsley, Parmesan cheese, lemon juice, garlic clove and salt and pepper to taste.
- Cut the salmon filet in half so that you have two equal sized portions.
- spoon the crabmeat stuffing mixture over each piece of salmon until it is well coated. If there is stuffing leftover, you can either discard it or bake it along side the salmon in a separate dish.
- Bake in preheated oven for 20 minutes or until the salmon is cooked through and slightly pink in the center. Serve immediately with your choice of sides.
