Ohio State rolls out new perch-inspired cuisine
COLUMBUS, Ohio - The Ohio State University has announced a new dining experience that will be offered at the institution's main campus this fall. Dubbed "Perch Inspired Cuisine", the program will feature dishes inspired by the popular freshwater fish.
According to OSU, the menu items will include perch tacos, perch quesadillas, and even perch pizza. In addition, several side dishes will also be offered, such as coleslaw made with shredded perch, and tartar sauce made from scratch using fresh herbs and spices.
"We're really excited about this new program," said OSU Dining Services Director Jonathan Fritz. "The perch is such a unique and flavorful fish, and we think students and faculty are going to love these dishes."
Fritz added that the Perch Inspired Cuisine program will be available at all of the university's main campus dining locations, including Morrison East and West dining halls, Java City Co-Op, and all of the campus food courts. He also noted that special menus will be created for holidays such as Thanksgiving and Christmas.
"We've been working on this program for over a year now," Fritz said. "And I think it's going to add a lot of flavor to our campus dining options."
Chefs from around the city create unique perch dishes for restaurant week

Ohio State student's recipe wins contest to be served at The Columbus Zoo
Ohio State University senior Abbie Smith's recipe for roasted cauliflower won the Columbus Zoo's annual Recipe for Success contest. The contest is designed to find a new dish to be served at the zoo's concession stands.
Smith, who is a vegetarian, created her recipe specifically for the contest. The dish features roasted cauliflower, crispy chickpeas, and a tahini dressing.
"I am so excited to have my recipe chosen by the Columbus Zoo," Smith said. "I really think it will appeal to vegetarians and meat-eaters alike."
