Instructions:

1) Preheat oven to 375 degrees F (190 degrees C). Grease a baking dish with cooking spray. Rinse the fish and pat dry with paper towels. In a shallow bowl, beat the egg lightly with a fork. In another shallow bowl, combine the almond flour, garlic powder, salt and black pepper. Dip the fish in the egg mixture, then coat with the almond mixture. Place the fish in the prepared baking dish.

2) Bake for 20 minutes in the preheated oven, or until the fish flakes easily with a fork.
3) Meanwhile, prepare stuffing by mixing together zucchini, summer squash, red onion and garlic in a medium bowl.
4) Heat olive oil in a large skillet over medium heat.
5) Add the mixed vegetables to the skillet and cook until tender.
6) Season with salt and black pepper to taste.
7) Once fish has cooked through, spoon stuffing over top of each piece of fish.
8) Pour chicken broth or stock into baking dish around stuffed fish.
